Chinese without the takeout

How about Chinese without having to do takeout? One of my favorite meals to make that my family and friends love is Sweet and Sour chicken with Pork fried rice and Egg rolls. So I thought I would share it with all of you! Enjoy!

Pork Fried rice
1 cup of diced cooked pork
1 pkg of frozen peas and carrots
2 cups of cooked white rice
1 can of sliced water chestnuts
3 tbsp of black bean garlic sauce
1 tbs soy sauce
3 scrambled eggs
2 tbsp of vegetable oil
In a pot heat oil and cook veggies, water chestnuts, black bean sauce and soy sauce together for 2 min. Add pork and cook for another 5. Add scrambled eggs and rice. Mix well and then heat for another 5 min. Then serve. Enjoy!
Sweet and Sour Chicken
4-6 chicken breasts cubed
1 ¼ cup of flour
1¾ cup milk
1 egg
1 tbsp of baking powder
3 tbsp of seasoned salt
2 tbsp of black pepper
3 tbsp of garlic salt

Sweet and Sour Sauce
2 jars of sweet and saur sauce (any kind)
1 cup of brown sugar
1 cup of sugar

In a mixing bowl mix flour, baking powder, black pepper, garlic salt and seasoned salt. In another bowl mix milk and egg. Add liquid mixture to dry mixture and then add the chicken. In a pot heat 2-3 cups of vegetable oil on high and once its ready lower the heat to low or use your deep fryer at 350 degrees. Put 8-10 pieces of chicken at a time and fry for about 5-8 minutes or until chicken is done and then take out and put on a paper towel to drain.

For sauce put all ingredients in a sauce pan and bring to a boil. Take off of heat and serve. Enjoy this sauce by dipping your chicken or putting all of your chicken and mixing with the sauce. Enjoy!

Egg rolls
1 package of egg roll wrappers
1 package of coleslaw mix
1 2lb pork tenderloin cubed
1 jar of barbeque sauce (I use honey barbeque)
2 tbsp of seasoned salt
1 tbsp of garlic salt
2 tbsp paprika
4 tbsp of olive oil divided
Vegetable oil to fry

In a bowl mix all seasonings. Rub 2 tbsp of oil all over tenderloin pieces and then the seasoning mix. Heat the other 2 tbsp of oil in a frying pan and once hot add tenderloin pieces. Cook for about 8-10 minutes or until pork is white and done. Take cooked pork and put in food chopper or blender and chop until fine. In a bowl add coleslaw mix and pork. Then add bbq sauce. Mix well and then put 1 ½ tbsp of mixture in an egg roll wrap and fold. Fry in a pan with vegetable oil or in deep fryer until it is golden brown. Serve and Enjoy!

Easy marinade for Chicken or Beef

If youre looking for a great tasting and easy marinade for your steak or chicken here's a great tip. All you need is 1 bottle of Italian dressing, 3 garlic cloves minced, and 2 tablespoons of Worcestershire sauce. Mix ingredients together and put in a ziploc bag with your meat or chicken. Let rest in fridge for 2hours to overnight and then grill or bake! It is delicious and easy to make. Enjoy!!

How about Lasagna with a twist!

What’s for dinner?” How about Lasagna? Everyone, especially kids love lasagna, but how about making it different and fun. Instead of making one big lasagna you can make individual lasagna rolls. You will need 10-12 Lasagna noodles cooked and drained, 4 chicken breasts cooked and shredded, alfredo sauce homemade or from a jar, 2 cups of shredded mozzarella cheese, 1 8 oz container of ricotta cheese, half a cup of chopped basil, veggies like cooked spinach and chopped mushrooms (can be optional), and salt and pepper to taste. Mix a half cup of alfredo sauce with shredded chicken, basil, 1 cup of mozzarella, ricotta, salt and pepper and veggies. Take 1 tbsp (or a little more) of mixture and spread on a lasagna noodle and then roll. Continue until all noodles are filled with mixture. Spray a lasagna pan with cooking spray and place rolls. Top with the rest of Alfredo sauce and mozzarella cheese and bake at 350 degrees for 45 minutes. Add some garlic bread and you will have a delicious meal that is different from your regular lasagna and fun to make!!! Enjoy!

If you need a simple, fast and yummy homemade recipe for alfredo sauce here it is: A 16oz container of heavy whipping cream, 8oz cream cheese softened, 2 sticks of butter softened, 1 tsp of garlic powder and 1 cup of parmesan cheese (add more as you like). In a saucepan on low heat melt butter and cream cheese. Add heavy whipping cream and garlic powder. Mix with a whisk until cream cheese and butter are mixed in well. Add parmesan cheese and let simmer for 10 minutes on low heat. Enjoy!
